I think so. All attacks that land a one-hit kill is considered a critical.

mmk. cause i'm using some modded traits, and theres a negative trait that prevents you from critting. and i kinda wanna use it on purpose because i've had the insta kill animation on the spear actually kill me because my character stands still for too long.

Make a test save and see if it affects the spear

AFAIK, you can't do the stab crit with spears/knives if there are more than one zombie near you. But you can still cause a crit with spear swings, without risking your movement getting rooted.
